Chef Thomasina Miers has been a collaborator of the Dirt Cafe project since the very start in 2004 when she, Patricia Michelson, Sarah Billney and Claire Hartten met as members of the Slow Food London planning committee and began exploring the relationships between food and design together. Thomasina created the menu for the very first Dirt Cafe Debate in 2005 -- the Rotten Debate -- that was facilitated by Wendy Fogarty, the founder of Slow Food in the UK.

With a passion and expertise for Mexican regional foods, Thomasina has recently launched Wahaca, her first restaurant, in London. Her recipe for ceviche made from a sustainable source of fish will be served as a course of the Dirt Cafe Water Debate's menu on plates created by potters from the Mexican Lead Free Pottery Alliance, an initiative sweeping Mexico that receives support from Aid to Artisans.
