 Chef Arthur Potts Dawson and Jamie Grainger-Smith, co-founders of Acorn House Restaurant, are collaborators of the Dirt Cafe Water project. Arthur was a member of the original collaborative team that created the first Dirt Cafe project in 2005. In particular, he created the menu for the Slow Debate that was facilitated by Sheilon Dillon of BBC Radio 4's Food Programme.

In additon to their collaboration on the Dirt Cafe projects, Arthur and Jamie have worked collaboratively with Patricia Michelson and Sarah Bilney of La Fromagerie and designers Maria Wedum and Claire Hartten during the creation process of Acorn House Restaurant.
